If you've been to one of Lacy's outdoor yoga classes, you may of tasted one of these ridiculously delicious treats. They're spiced like chai tea (another one of our faves!) and are a completely natural and super easy treat. So here's the recipe.
Makes 8-10 rolls
Time: 40 minutes (with 30 minute chill time)
- 1/4 c. raw pecans
- 14 medjool dates, pits removed
- 1 t vanilla extract
- 1/4 t cinnamon, ground
- 1/8 t ginger, ground
- 1/8 t cardamom, ground
- 1/8 t cloves, ground
- 1/4 t salt
- 1/8 c. coconut, shredded
1. Combine all ingredients but coconut and pulse in a food processor until a sticky dough forms.
2. Chill dough in the fridge for about 30 minutes.
3. Roll out dough on a piece of wax paper and form the dough into small balls about 1" size or smaller, then roll each piece in shredded coconut to lightly coat.
Store in the fridge for up to a week and share generously !
